Many knitting blogs seem to have a lot of detail about completed projects. My knitting projects are not this well documented. In the spirit of the former, I offer Squash Casserole: Project Notes.

Here's my slightly modified version of Katie's squash casserole. I didn't have enough squash on hand, so I replaced the 5 squash that the recipe called for with 1 large eggplant (peeled and cubed) and 3 squash. It was such a warm, creamy, comfort dish! I will be making this again, maybe experimenting with different veggie combinations - and chicken. I'm sure it would work with meat.
Sadly, I was the only one in the family who ate it. The children didn't touch it, and Randy does not like creamy casseroles. Maybe if you come to visit, we can have this. It's yummy!
